Pro = 2.26 ghz and DDR3
Not Pro = 2.16 ghz and DDR2

I don't get it. Does that difference matter to professionals?

No. It's how they decided to spec it.

"Pro" = Better displays (Glossy vs Matte, GTFO), FW800, Aluminum "unibody" chasis, multi-touch glass trackpad.

It's more about the plastic vs metal, but I am one person who prefers the look of the white MacBook. I have no idea what Apple was thinking when they decided to add ridiculous black accents to the MacBook line. Long live nice harmonising shades rather than sharp contrasts.
