Just reserved a 12 pro for store front collection on Thursday from Birmingham.

Does anyone know if I will be able to return my 12 pro max at the same time or not?

You should be able to. At least here in the US of A, with stores that are express pick up only, you can return products, what you cannot do is do an exchange.

I got my iPhone 12 Pro Max pickup in the store on 13th, then I go back and return iPhone 12 Pro on 14th, the refund was posted to my credit card on Monday.
