Seems you are not alone with no 5G. IIRC you have 5GSA in your area, but wanted to ask if your EE account is also 5GSA provisioned? EE and VF have been picky about which iPhones and account plans can access SA and was thinking this might also be a factor. This might also apply to @dannymcg5G Redcap is the form of 5G that the watch uses. Also requires you to be in a 5G standalone area.
Regrettably I do not believe 3 have deployed their 5G RedCap yet and are now probably waiting on Vodafone, following their merger. I entered the following question into Google "Have EE UK deployed 5G RedCap" and it comes back yes, but does not confirm the extent of the roll-out. If you repeat that for the other UK networks, they come back as No, but either are about to or still trialing. As there have been no public announcements from VF, O2 or 3, then without the 5GRC, the watch is limited to 4G/LTECan confirm the it's the same for me on 3 network - although I don't live in a city I do live quite close to a 5G antenna and get a 5G signal on my iPhone.

As you noted others have got 5G RC connected - great news - but I'm guessing they are in a larger urban location. Have you tried beyond your locale?
For me this launch has been poor. From mine and others experiences both Apple and EE have not adequately educated and trained their customer facing teams. You know it's a mess when one side suggests you contact the other and then visa-versa when you do.

Someone on a other forum said it could depend on if you’re in a Nokia or Ericsson area in terms of masts.

I didn’t have a plan for the watch. Just had an EE sim only plan on my phone. When I went through the steps of setting up the watch it took me through the steps of requesting an eSIM AW plan which is £7. And to answer the other question, I bought the watch from the Apple Store.
I initially thought the same, but it would seem that doesn't make any difference as there is someone on the EE forums saying that their's was a new plan, and not a transferred plan, and they cannot connect to 5G on the watch.Makes me think it needs to be a new plan and not a transferred plan from a previous watch.
I have a SIM only plan with EE, the iPhone Full Works. Activated my U3 with the plan and tested the other day and got 5G

EDIT: When I activated the U3, I did ask about 5G and the agent fumbled about then said no it isn't yet available on EE watch eSims.
What exactly did EE say they had upgraded on the plan?Ok, I’ve been testing my new Ultra 3 today. I spoke to EE, and had my watch tariff ‘upgraded’ but with no changes. However, I now notice an add on that is 5G standalone on the watch. And, when I tried the 5G in a 5GSA area, the watch showed 5G fine 🙂

I've looked on the EE app and all I see are two numbers, one is for my iPhone's sim only plan, and the other is for my Apple Watch's data plan, and when I select that one, it just shows 100 percent watch sim discount in the add-ons.
I'm just wondering if there is something that the last customer service person who I dealt with last week has not done on my account, that would perhaps have allowed me to connect to 5G.
Yep it is there for me.For those that are able to connect to 5G red cap on the their watch, it would be useful for others to know if you have a "5G standalone option" under Mobile Service -->Mobile Data options mentioned by Spacer in post #18 above.
If this is a common theme for all those that can connect to 5G, it will allow others that are not currently in a 5G Red cap area to know if their plan has been setup correctly.
