I couldn't find any specific info. Does that mean that an iPod Touch 2G with 3.0 firmware can now jailbreak with Ultrasn0w?

No, Ultrasn0w is the new Yellowsn0w, just for iPhone 3G's on 3.0 firmware.
Redsn0w is the new Quickpwn, and works for all devices except the iPhone 3G S
