Ok, not sure about the terminology here, but this is what I want to do.

I've got a 27" iMac and a cintiq tablet attached to it. When running photoshop, I want the program to run on my tablet. Right now, all of the menus and such are on my main desktop.

How do I detach photoshop from the main desktop and drag it over?

You could enable spaces and move an entire space over to the tablet and have that space contain photoshop. As always, the menu bars move with the space so this should too.
 
Thanks. I think I'm going to have to try that. I've yet to find any other solutions.
 
Nope, Spaces did not work for this. The menu would not unlock from the top of the screen.

Instead, I did what this guy suggests.
