Hi, I have a Macbook Pro Retina 2017 and Im selling it now.
Its updated to OSX MONTEREY already.

So, I had to do CMD+R and goto disk utility and then erase all MACINTOSH and MACINTOSH DATA drives - so I can install a new copy of OSX.
Then I restarted it and again did CMD+R and clicked on REINSTALL MACOS.

It shows it will install OSX SIERRA.
Not sure why, but I clicked yes and let it install.

Now it shows installing for 30 mins and then in the end when only 1 second is left, it shows - AN ERROR HAS OCCURRED -

Now, I have already restarted multiple times and tried, but it takes till the end and then shows this only.
What to do ?

It’s not OS X anymore…hasn’t been for six years. It’s macOS now.

What’s the exact error you’re getting? You said you’re installing Sierra, but your screenshot says Catalina…from macReports.com?

That's an Internet screenshot :)
The MacBook pro was running Monterey but after resetting disk and erasing and booting to CMD+R recovery, it only tries to install SIERRA.

and ends up with this error.

Internet Recovery would offer you the version of macOS that your 2017 MBPo shipped with, which is Sierra.
If you want to leave the buyer with Monterey reinstalled, you will want to download the Monterey installer on another Mac, and use that to make a bootable USB Monterey installer. Boot to that on your MBPro, erase the drive, and install Monterey on that erased drive. Just don't set a user after the install, let the new owner do that. Shut down at the screen where it asks if you want to copy files from a backup or another drive.

You said you erased the (Mac) HD drive and the (Mac) HD-DATA drive.
That may mean that you did not reformat the device, and change back to Mac OS Extended (journaled).
Sierra won't install on a APFS format drive.
So, best if you go back to the Disk Utility, choose the device (top of the list, has the manufacturer's model number), and erase THAT, not just the individual volumes. If you erase the device, that will delete all volumes, and leave you with only one, which is what you want.

Also, different key combos dictate which OS version to install. There’s one to install the latest compatible version, which would be Monterey. You can find those here.

tried this, it shows same SIERRA.
I think I need to reformat the drives again, as it shows me 3 Macintosh drives

don't waste your time refomatting all the volumes on your boot drive. Remove all of them by erasing the device.
Disk Utility: click the View icon, and choose Show All Devices.
Then select the top item in the list on the left side. That should show your internal SSD (with the model number showing)
With that line selected, choose Erase. Change the format to Mac OS Extended (Journaled). Name it something that you like (otherwise the drive will be named the default "Untitled" ), then click the Erase button. Within a few seconds, all the volumes on your drive will be gone, replaced by one volume.
You could continue on with the Sierra install. The buyer can decide if they want to upgrade.
Or, best way to get Monterey is to download it for yourself. Make a bootable installer. Installer Monterey on the MBPro, if that will make it easier for you to sell. I usually sell a used Mac with the bootable flash drive installer as an extra for the buyer.

Ok I tried what you said - and it still doesn’t work.
It says this.
See attached.
