I am still on iOS 17.7.2 on my iPhone 15 Pro. I want to wait a bit more before upgrading to 18.x.

I am trying to update my Apple Watch Series 6 from (I believe) 10.4 to 10.6.1. It keeps erroring out. IIRC the error message indicates that I need to update my iOS to the latest version, which I do not want to do yet as mentioned above.

Note that I am not trying to downgrade. I am merely trying to upgrade to the latest version of watchOS 10 since 11 is not supported on iOS 17.x.

Has anyone successfully done this? Or does Apple block any updates to the last minor revision to the last major watchOS version once the newest major iOS and watchOS updates are released?

Doesn't work that way. Watch OS10 is no longer being signed so you're stuck on whatever version you're on. You won't be able to update to Watch OS 11.1 either unless you update your iPhone to iOS 18.1 or 18.1.1 first.. If you want to stay on 17.7.2 your watch is stuck on 10.4..

Unless you have a Series 4, 5 or original SE where 10.6.1 is the last supported version of watchOS. Apple only signs the most recent supported software version for any version of Apple Watch hardware.

Considering the OP has a S6 your response doesn't relate in any way to his situation.
