Unable to update any iOS device via iTunes

Every time I try to update via iTunes I get the error shown in the screenshot. Can't use OTA to update as one device is pre iOS 5... The other is a beta of iOS 6. Tried restore but get the same message.

(This was the same reason I never updated the iPad 2 from 4.x to 5.x... Always got that message every time tried and in the end, just gave up.)
