My Series 3 is currently sitting on 4.2 (15S102) and when I go to Software Update in the Watch app, it tells me my software is up to date. I've tried restarting the watch and killing the watch app to get the update to show up and nothing.

Any suggestions?

It might be iPhone related, not the Apple Watch:

Try resetting network settings First.

If That does not work, then reset all settings on the iPhone, which Should repair the issue.

Thanks for the suggestions. Unfortunately, after getting everything back to the way I had it, I'm still getting denied.

Just installed the beta profile (came from the same file containing the iOS 11 beta profile that allowed me to install iOS 11.3) and my Watch app is still showing up to date at 11.2.

This is getting pretty frustrating.

I'd reboot the phone.

The phone rebooted yesterday when I installed 11.3 but I just tried it anyway. Still no dice.
 
I'm terrified of resetting/restoring/doing anything with the watch as I've read horror stories of people losing all of their activity data.

I'll have to try it tonight as I have no (dependable) wifi here at the office.

When you un-pair all of your Activity data is backup from your Apple Watch to your iPhone before it will un-pair. To be safe also make an iCloud/iTunes backup of your iPhone right after un-paring.

Update for today: I got home last night and attempted to unpair the watch. I received an error saying the unpairing was unsuccessful but I still got the pairing screen on my phone. The watch also reset after a short time.

I went through the pairing process and restored from my backup. After getting everything set up I went to the software update screen and sure enough, there was 4.2.2. I hit the update button and the progress bar briefly showed up with "Downloading..." then that was replaced by "Estimating time remaining...". A couple of seconds later the update screen was replaced by the all-too-familiar "watchOS 4.2 - Your software is up to date." screen.

So I'm giving up. I don't know if I should schedule a genius bar appointment for this since my watch is working fine where it's at and I really don't want to take the chance of losing all of my activity data since it seems like I'm going to have to set up as new to get around this.

If you want to try one more thing because it's not a hardware problem, do an un-pairing and then restore as new. Unfortunately when you have a problem you have to go through a troubleshooting process to fix it. Sometimes step 1 fixes the problem. Sadly many times step 5 is the answer.

Can I restore 4.2.2 to a backup of 4.2 if the update does go through?

I believe you would have to restore to a previous backup of your choice and since all your backups will be 4.2 and less unfortunately no. But what you will learn is there is something in that last backup that's stopping you from upgrading and nothing else.

If this turns out to be the case you then have 2 options.

1) Continue with the new restore and update to 4.2.2
2) restore from a backup previous to this one. This previous backup might not contain this problem. Try to upgrade to 4.2.2
 
I went ahead and unpaired my watch from the phone (got an unpairing error again) and set it up as a new watch with the intention of trying to restore it from a backup of 4.2 after getting the update installed.

After the update I finished the setup process and my activity from the gym this morning spun up in the rings on the default Nike+ watch face. I went into the Activity app and all of my data was there. Seems it’s 100% in the cloud now and doesn’t require being carried over through a backup. Great news.

Now I just need to figure out why I can’t get the 4.3 update to show.
 
I noticed this morning that the watch app on my iPhone is showing that there’s an update for my aw3. It seems to be downloaded already as there is no download now button. It does say that in order for the update to go through, the watch must be on charge above 50% and connected to Wi-fi. It’s been sitting in my charging cradle all day, with my iPhone next to it plugged in to the charger too. Both are fully charged and have been for hours, but update not been installed yet.
I’m not going to **** about with resetting factory settings etc and will just leave it overnight......
