I'm just wondering if this will upgrade my baseband (I don't want it to!)
I previously made the mistake of checking this box even though I was on an official carrier, and am fixing everything now, but want to make sure I don't make another one by doing this and losing the ability to unlock if necessary.

No, unchecking the activate box has nothing to do with the baseband.
It means your iphone will be activated officially with itunes when you plug it in with your sim inside.
Your baseband will remain untouched if you use pwnage.

"Activate" is only necessary if you do not own the SIM card for the respective carrier that the iPhone is locked to. ie: If I own a Rogers iPhone, but I do not own a Rogers SIM, I would use this method, called "hactivating" to activate the iPhone so that I could jailbreak, unlock, use it as an iPod, etc. If you do not fall in this category, then you should not hactivate because it has been known to cause problems with push notifications, and you should instead activate officially with iTunes. :)
