Every time I try to manually remove the SummerBoard stuff, the iPod will not boot past the Apple screen. So I drag the files back in via FTP and the iPod boots again. How do I uninstall SummerBoard without making my iPod unbootable?
 
That's because you probably just removed your com.apple.SpringBoard.plist without replacing it with your original one. If you didn't save it when you replaced it during your manual install, then you'll need to go back into your rdisk0s1.dmg you made when you originally jailbroke into your iPod and take it out of there to put back into your iPod.
