If I bought some Universal USB FM transmitter such as this one:

And then found some sort of special splitter (3 wire instead of 2) so I could hook up my earbuds and FM transmitter, would this in actuality let me stream audio to my radio AND allow me to skip tracks using the button on my earbuds?

No, do not purchase this for the iPhone. The cable is not shielded enough to prevent the buzzing from the iPhone antenna's interference. It is frequently overpowered by passing vehicles' own FM transmitters. This product is not highly recommended for use at all.

sounds to me like it's not worth the cheap price...
