Is it possible to unjailbreak a jailbroken iPod without having to copy your music and videos back onto it?

i could not think of how , i suppose use installer to uninstall everything you downloaded , then manually go in an delete all the iPhone and summerboard apps , it will still be jail broken but it will look more like an unjailbroken iPod , with the exception of the installer app on the screen
 
after you're done uninstalling everything, sftp into it and delete installer.app from the /Applications directory.

You can also remove the sftp server and ssh access. Just make sure you remove ssh last :)
