Unlock now, activate "for real" later?

Can I buy an iPhone now, unlock it and use it with the SIM from my RAZR (which is already on AT&T's service, via Consumer Cellular), and then activate for full data service in the future when I decide I'm ready?

This would be so much easier if they just provided an easy non-contract option. I have a real problem with committing to two years.

Thanks for the quick reply. I just got back from the Apple store and I have an 8 GB iPhone sitting in front of me. Now to decide what to do about it .

I stopped by the AT&T store first since it's 10 miles closer, but they absolutely wouldn't sell me a phone without doing a credit check in-store. Kiss my you-know-what, thanks .
