I had my iPhone unlocked by AT&T. I was wondering if it was possible now to use redSn0w or so to install cydia without it removing the AT&T unlock. I can't use ultrasn0w because it has the baseband of 05.16.05 and rather not convert it to the iPad's baseband. So would using redsn0w to install cydia remove the unlock that came with the AT&T restore?

No it wouldn't.
If you are carrier unlocked by AT&T it is permanent for that phone.
The unlocking is done on an IMEI basis and fed into Apple database.
So you can Jailbreak at will. Have fun!

Your phone is forever unlocked.
You can JB if you want. Just make sure to never ever ever install the ipad baseband on it.
