Hi. I unlocked and jailbroke my 2G iphone waaaaaaay back. I have never touched it since as far as updating or restoring. Im looking to sell and im having problems with the phone locking up from time to time and freezing on the password screen once it reboots. Im thinking this is software issue as the Apple store Geniuses who surprisingly ran a diagnostic said it was physically fine.

My question is, what is the best route to restore and then reunlock and jailbreak for the person who buys my phone? I have a new 3G and im worried about putting the latest 2.2.1 firmware and the 2.30.03 on it as well thus rendering it useless for a few months unless with ATT.

Original iPhones use a different bootloader so the 2.30.03 baseband philosophy doesn't apply. :) You can update your iPhone 3G to 2.2.1 without updating the baseband, just follow the dev team's tips when using PwnageTool.
