So after a lot of looking around, I found this great utility - if you have a flash based iPod and a Windows based machine, this can be a real lifesaver...
Google (Or search HP's site) for "HP USB Disk Storage Format Tool".
When you cannot get your machine to mount/restore/recognize your flash based iPod, format it with this utility (FAT32 File System) - eject your ipod, plug it back in, and restore! Just thought I would share in case anyone else has a problem.
