I unpaired my watch this morning and re-paired to make a backup of Watch OS7 on my phone. I have now unpaired and re-paired 6 times and fitness won't update steps, calories, stand etc.. and it will no longer unlock any of my Macs. Anyone who any other thoughts as to what to do?

to unlock your Macs, you might need to re-authorize in the settings on your Mac after a re-pair.

give it time to update, it does a lot in the background after pairing, and if you've done it 6 time today, it hasn't had time to finish what it needs to do before you start the process over. (I'm surprised you've had time to even do the restore process 6 times) Some of the data is not in the backup and synced after pairing, that takes time.
as long as the step count is going up on the watch, just let it be, and check it again after a few hours.

When you pair the new watch, is it showing up as a device in your Apple ID?
Yes. This is all kind of a moot point now. I decided to downgrade back to 13.7 and unfortunately it bricked my phone. so, it looks as if I'll be setting things up from scratch. Hope it works this time.
