I spent several hours last night going back and forth with my AW 3 and my iPhone 7 and iPhone X. After a lot of gymnastics, I managed to recapture all my major workout data, but lost some of the details. I think this was due to an unsuccessful un-pairing of the AW from the iPhone X.

Does anyone have any ideas why the watch (or phone, I forget which) would report a failed un-pairing?

What's the fix - re-pair the watch and phone, and then un-pair again? Are there any steps that would avoid this?

I’ve seen this notification before, but it looked like a simple timeout issue between the phone and the watch. Unpairing takes a long time.

After waiting around a bit, I was still able to successfully re-pair the watch to a different phone and then restore.
