If I have a mobileme family account but i only need three accounts, the 20gb and two 5gb accounts, what happens to the other 10gb set aside for the two other subaccounts? Is it just unused and unavailable?

At least with .Mac that's how it is...unused and unavailable. Been one of the complaints of some family pack users that they couldn't re-allocate the space as they see fit between any of the accounts.
Maybe MobileMe once it launches will change that (doubt it).
