Update iphone to iOS 5 on alternate computer

I am travelling and want to update my iPhone to ios5 from my laptop. My iPhone is backed up to my iMac at home. Can I update to iOS 5 via laptop, knowing I will lose my music and videos and then restore all of that when I get home to my iMac? If so, I can still re-download some of my paid for apps from the app store tomorrow after the iOS download tomorrow, right?

All your stuff would be gone. Besides that, it's perfectly possible. I don't see why you would want to go through all that hassle though.
