When Apple updates the Modem firmware, what does that do for us? Make calls more stable? Make bluetooth more stable...?

Maybe maybe not, but modem firmware is usually to fix any reception issues, maybe improve call quality or accuracy of the signal bars. Don't quote me on it, but generally that's what they'll do.
