In my DOCUMENTS folder I found another folder titled "Updater5"

Any idea what this is, and if I can delete it?

I've googled Updater5 and it appears to be something connected to Adobe. However, the folder is empty.

That is, I believe, the folder that Adobe Reader (as of v8) stores any updates it downloads. Deleting it won't hurt anything, but I'm pretty sure Reader will just recreate it the next time you run it.

If you don't use Reader much, of course, it will stay gone.
 
It is also part of the Adobe Creative Suites. It is the auto updater for pretty much all of adobe's current applications.

I think Adobe's Updater lets you choose a different place where it will put that stuff. I have mine in ~/Library/Application Support/Adobe where it makes much more sense to have.
