I have three watches currently paired to my phone, and I call it the "update merry go round". You can't really wear one watch while updating another, because if the phone switches from the watch that's updating to another, it will pause the update. So I typically just start one, then the next when the first finishes, and then again with the third. That changed at some point (I assume already with OS7). You can update them independently of the phone connection by starting the update directly on the watch.
