I have the 2011 15inch MBP with the 6750m and I'm not sure where I should go in order to grab the latest drivers. Every time I attempt to download and install them directly from amd/ati it says unsupported product detected. Is there some trick to this I'm unaware of? Also where do I go to check what version is installed?
 
Apple provides the drivers with the latest version of the OS. All you have to do is run Software Update. Therefore, the current drivers for your machine will be part of 10.7.2.

Also, the graphics chip on your machine doesn't work like a normal graphics card. The OS will automatically switch back and forth between two graphics chips in your machine from two different vendors, so the drivers are going to be a bit more complicated than normal, anyway.
