I have an iPhone 4 on iOS 4.3.5. And an iPhone 4S on the way. Any reason to (or not to) upgrade my 4 to iOS5 before activating my 4S and restoring from backup? I don't mind backing up to iTunes and in fact I assume backup/restore from iTunes will be faster than iCloud while apple servers are under heavy load next few days.

I would and do one backup to iTunes (or iCloud) so that when you restore your new 4s from your back up you are all set.

Added Bonus: I think the restore and activation can then happen wirelessly.
 
I upgraded my 3gs to iOS 5 in anticipation of the 4S so that I can reorganize all my icons as desired (since they force new stuff like News Stand on you that you can't delete), and also download the new apps like Cards and iTunes Trailers.
