Hi everyone,
About 4 years ago I upgraded (and then sold) a 3,1 Mac Pro and that went fairly well, after a few mishaps on the way.
I've now got ahold of another one (2x3.2 Xeon) basically for free, and want to do a similar thing again. I just want to check what has changed since 2016 in terms of best options for this machine.

- is the GTX680 still the best choice for GPU? I gather now we have Opencore etc (which I don't recall being an option back then) native boot screens are not such an issue so do other GPUs now become more viable? I am just looking for OK performance and Metal support for Mojave (or poss higher).

-last time I used an OWC Accelsior card to get SATA3 speeds for an SSD. Is this still the best option, or is a blade SSD a better choice (though they are still quite expensive I gather). FYI I have a couple of spare SATA SSDs.

-what is the best USB 3.0 card for the machine? Ideally something that it can boot from, though not a dealbreaker.

-I guess Dosdude patcher is the only way to get Mojave/Catalina on it?

Any further tips very appreciated. Many thanks again!
