Just curious on opinions on what i should do.

I have a flawless launch SS Series 5 which the battery will last me maybe last me 10 hours if i'm lucky(health is 73%), many of the features on the S10 really don't do much for me. Should even entertain the idea of getting an S10 or should i just do a battery swap for the S5?

to "swap" the battery, you'll get a refurb from Apple and I think the cost is ~ $100 in the US, I'd double-check though with Apple.
Me, I wouldn't spend $100 on a 5 year old electronic device. Do you need the Ti version? sapphire glass? today the S10 GPS all is on sale for $299 (front page). Also, you might get deals on old stock of the S9 SS ...

If the device is satisfactory, then replace the battery. If you want a new device, money is tight and you want to spend it, then buy a new device.

Ditto this.

My SE Gen 1 battery is at 82% and was going to "limp along" until S11. But that front page/Amazon deal, $100 off, discounted AppleCare+ ($64 for 2yrs), no brainer for me as S11 will most likely be a tick release vs tock, and won't add anything I really want/need. Was looking for deals the other day and best was Amazon at $50 off then. Glad I waited.

Similar here with my Series 6 44mm and 78% battery health, which rarerly survives ~ 1h outdoor activities with active LTE, GPS and music to AirPods, if not fully charged to 100% before going outdoor. Otherwise totally fine in terms of screen etc.

Battery service for my Series 6, I was told, results in a full replacement with a different (refurbished?) Series 6 and would cost me around 110 EUR. For a model which likely does not get the next watchOS major version this autumn 2025 anymore, so in this regard, a dead end, it seems.

Thus wrapped my mind around getting a new instead but I'm torn between Series 10 46mm and Ultra 2 Black. Series 10 having the latest tech (SiP, 1s refresh ...) vs. Ultra 2 with previous gen tech in terms of SiP etc., where an Ultra 3 could be released in autumn 2025 and I'm more into getting into Ultra territory this time, due to outdoor activities, but kinda torn again buying a Ultra 2 now with an Ultra 3 on the horizon, but struggling with my AW6 battery for next months is even worse for me, I think. :)

Ultra 3 is speculation at this point. I would get either of your choices depending on your priorities. I have the Hermes S10 with their new SS band.

My SE (1st gen) is currently at 71%, and there is another 6 months or so on the new release of Series 11. Holding out...
I actually might do the same, i just "surround myself" with chargers. (work desk, bedside, bathroom (while shower), and a portable charger in car for emergencies).

Not ideal but it "works"
