I’m a big fan of my 2nd gen AW but i haven’t really seen any benefit to getting a newer one than that (i don’t want it on cellular).

Has anyone else upgraded since then and been glad they did? What were the biggest benefits?
 
Is the Series 2 starting to get laggy? If it's still performing well, I'd keep it until the Series 6 comes out, if the upgrade is huge maybe jump to it, or buy a used Series 4/5 then.

The biggest difference is that Siri is much more usable with Series 3/4/5. With Series 3 I could ask Siri to add things to reminders, send text messages, or ask for sports scores and weather. Prior to the 3 there was a lot of waiting.

OK, let’s clarify here, it’s a ‘Series 2’ you own, not a second GEN. Also, some might conflate a second Gen as a Series 1. [Just want point that out, the way you worded it is kind of confusing.]

If you own a Series 2 and you’re considering a ‘newer’ model, which model are you considering, the Series 4 or Series 5. For you and your situation since you’re not someone that regularly upgrades, I would probably consider the Series 4 (Both models are fairly similar), unless you want an always on display [AOD] with the Series 5.

Plus, with the Series 4, they’re discounted and you can even purchase a refurbished model from Apple with a warranty.

It depends how you use your watch.
If you just use it to receive notifications, and watch hour, it's OK with series 2.
But if you want to start apps, use siri, interact with your watch, the difference between S4/5 and S2 is a abyssal !
I had a series 2 before my series 5 and most apps take 5 or 10 seconds to run, there were a lot of lags each time I had to click on something.
Series 2 was fine with Watchos 3, but the CPU was too under-powered to support smoothly the next versions.
Series 3 is a huge improvement and is smooth enough with watchos 6

I mean the main uses for me are getting notifications of texts/calls/calendar appointments without having to have my ringer on or phone on my body, and step/pulse monitoring for work health incentives (+workout app). One of the major failings was attempting to put podcasts on it to listen to while running. The only thing available seemed to be Watchcast which took multiple tries and 10+ minutes to sync a single podcast over bluetooth. I gave up on that and just started carrying my phone in my pocket when running.

I guess I was just wondering if there are any 'can't miss' features since series 2 that I might be overlooking that people particularly enjoy.

The increase in screen size is largely what motivated me to move from Series 2 to Series 4, the improved processor also makes it much faster. You wouldn't really know if you're only using Series 2 but having worn both, it is a noticeable difference in speed of opening apps and certainly upgrading. The speaker is much better as is Siri. More storage and ECG aren't bad features either.

Series 5 gets you Always on Display, more storage and Compass.
 
The screen size increase alone would be enough for me. I've upgraded from S3 to S4 and also from S4 to S5. No regrets about either upgrade.

Main benefits is speed. Apps load and run so much more smoothly, and this can make all the difference between using an app successfully vs cancelling it out of frustration from waiting too long.
