Upgrade iOS 8.0.2 to 8.1.2

Hey.
Is it possible to upgrade my iPhone 6+ from 8.0.2 to 8.1.2?

Im looking to jailbreak it but obviously don't want to upgrade to 8.1.3

I wasn't sure if there's away to hook up to iTunes and choose an earlier update without upgrading to the current iOS...?

No, iOS 8.1.2 isn't being signed any longer, so there's no way to install that version.
