I currently am thinking about upgrading either the 4gb ram to 8gb ram on my mid2010 macbook pro or removing the optical drive and putting my 1.5tb hdd into that and putting a new ssd where it was.

I am wondering which is better to do? The ram or the ssd dual drive system? Anyone know a good ssd to get for SATA II that is currently at a good price. Thinking 128GB or 256GB.

Get a Samsung EVO. Good price/performance, and it should max out SATA II. SATA III is backwards compatible with SATA II.

Check the "How much RAM...." Wiki to see if you'll benefit from more RAM.

If not then look at the SSD. Samsung Evo or Crucial MX100 would be a good choice.
