Do you think apple, or someone else will offer a service to send it in and upgrade the ram down the road? I know it's difficult, but surely it is not impossible.

What would be the point? Even if its possible (which we don't know, the boards may be using different physical layouts), already the working time required to do an upgrade like this will make it economically meaningless. Also, such upgrade would be very high-risk, as one careless move is likely to fry the whole boards. You could probably do it at a shop somewhere in China somewhere for cheap though.
