I have an old iPhone 3GS running 3.1.2 and an iPhone 4 running 4.1. Both phones are currently jailbroken.

Is there a way to upgrade them only to 4.3.3 for an untethered jailbreak?

If you have shsh blobs yes check tinyumbrela and Cydia to see if you saved them. The 3GS you can jb 4.3.5 untethered the i4 would be tethered if you don't have the blobs.

Thanks; I do not have shsh blobs - do you need those for an upgrade as well?

Well upgrade would really mean to the current firmware apple is signing if you want to restore to a version older than the current it would be the same concept and procedure as "downgrading"
