Hello!
I wanted to ask if I can still upgrade to Yosemite instead of El Capitan? Does the Mac App Store give me a choice? Anybody in here to tried out upgrading to a version which is not the current one?

If you've bought it previously, then yes, you can just download the installer. If you have not, then you need to find someone with an AppleID where it was bought, otherwise you are out of luck.
 
General question: is there one unique installer for all Macs (MacPro, Mini, Macbook Pro) and languages or do I only get a specific one for my machine when I download it from the Mac App Store?

There is one Yosemite installer for all Macs. There is not a customized installer for each Mac model.
