I use my MacBook Pro (spec in sig) mainly for iMovie and Final Cut. Other uses are not taxing.
Will I see much of a benefit by upgrading to a newer MBP - was looking at the 2.9GHz i7 13" model? (Would retain the SSD)
I assume encoding times etc will be faster, and rendering will also be faster - but are we talking a big difference or shaving a few seconds here and there?
 
Assuming you're coming from a Core2Duo 2.66Ghz, you will see a massive improvement with the i7 at that speed.
 
So for me it will be a worthwhile upgrade, considering my usage?

If I was to sell my current system (I would leave the 8GB RAM, but restore to a 500 or 750GB HDD and keep my SSD for the new MBP), how much should I be aiming for?
I tried Mac2Sell etc, but those places massively underestimate prices IMO.
I'm thinking around £600?

I am giving this place a go https://www.sell-your-laptop.co.uk/ as they offered me £569 for my Macbook Air 2011 Model which was more than mac2sell, cex and apple and get very good reviews.
 
I upgraded from a mid-2009 C2D to a late-2011 i7 and the difference in Lightroom was massive, so I'd expect you to see an even bigger difference with video.
