I upgraded my mac to Big Sur and didn't realize that my adobe CS6 apps were going to be incompatible with it. I've now been researching about downgrading and it seems complicated. I didn't think about making a back up before updating, which was my mistake.

I now downloaded carbon copy cloner 6 and made a back up of my computer. I'm just worried that I'll go to downgrade and my backup won't fully work and I'll have made an even bigger mistake by deleting my hard drive.

What is recommended here?

I've made a bootable high sierra drive, but then also realized my mac was previously on 10.14 Mojave. I'm not sure what would be better to downgrade to. I just want to be able to use my adobe apps again.
