I followed this guide and everything went smoothly:
I put in a 1 TB SSD (about $160 shipped from China). It came with some tools but I used my own. The whole upgrade process took about 10 minutes.
The DFU restore (connected to my M1 MBP) took about 15 - 20 minutes and then the restore from Time Machine backup was about 10 minutes.
The only hiccup was the DFU restore failed at first because I didn't realize that you have to connect to the middle Thunderbolt port on the back of the computer.
Overall, an easy upgrade. I'll keep the original 256GB SSD in case there are any issues.
