So I have a 3GS with unlimited data. I read somewhere that the 4 and 4s take a different kind of sim. So when my phone arrives, how do I get the correct sim card for my new phone so everything is the same as before?

3GS's take A bigger Sim Card, right?
an iPhone 4(S) Takes a Smaller Sim card. Talk to your carrier about it.

Your new iPhone will come with a SIM card. Just plug it into iTunes and go through the activation process.

and the new sim card will still have my unlimited data plan? I'm just trying to be cautious as I use way over 2GB and can't lose my unlimited data.

Your unlimited data plan has nothing to do with the sim card. As long as you selected unlimited data while ordering your iPhone 4S, you will keep your unlimited data plan.
