I'll be upgrading an iPhone 3G running iOS 3 to an iPhone 4S running, of course, iOS 5.

How will this upgrade process work if I want to keep the old text messages, contacts, apps, etc. from the old phone? Can I "restore" the old phone's backup from iTunes to the new device, even though it's from iOS 3?
 
All the stuff you want to keep should be in iTunes. Just set up your new phone and synch so it has on there what you want. IDK about texts, though.

Some or all of those apps will need to be updated to work on iOS 5.

Man, you'll enjoy the hell out of it - way faster, great features - enjoy.
