My S4 came in yesterday, and I was hoping to set it up tomorrow night. I currently have an S3 with cellular service with AT&T.

What is the proper process to upgrade my watch? I think I can "restore" from S3 to S4 to preserve all settings, apps, etc., but what do I need to do with the cellular? Do I need to deactivate it on the S3 first or will upgrading watches automatically take care of this?

If your watch backs up every day then it’s literally a matter of turning the watch on -> pointing your phone camera at it & thats it. For the cellular switch you might need to call your carrier & provide them the EID number.

Yes (you get the option to) deactivate your cellular plan on the phone when you unpair it...so do so. You should then get the option to add a plan when you set up your new watch. It was very simple when I did mine and worked straight away.
