Black ones are usually more expensive because they are sold as enterprise grade and have longer warranties.
In my opinion, you'll be fine with the blue one so save your money.

Make sure the drive you order is for a laptop, the black one is listed as 3.5inch so will not fit in your macbook at all. Not sure on the blue one, but it could be the same. For the MBP you need the drive to be a 2.5inch one.

I have maxed out my hard drive space in my 7,1 MacBook Pro (mid 2010) and want to upgrade my storage. I see two good deals on Amazon but want to make sure that they will work with my computer. Also, what is the difference between them and would the difference really be noticeable?

Both of those drives are vastly too big to fit inside your MacBook Pro. You need a 2.5" hard drive, and I would recommend this one:

You want 7200 RPM and 2.5" and HGST has a great reputation.
