I have a Lion USB stick I made using the instructions on the web. It boots fine.

I have a completely up-to-date Time Machine backup of my machine.

Ideally I'd like to do a Clean Install - I bought the machine 2nd hand so it would be a good idea to do this anyway.

But what I don't understand is the Time Machine restore part. If I wipe and Clean Install, what do I do to get the documents and such back on the machine. Just do the restore and it just works?

You can do a clean install from the Lion USB stick you made. When the machine boots after installing, it will prompt you to choose your country, time zone, keyboard layout, username, etc, it will also ask if you want to transfer your information. You select "From a Time Machine Backup" while your TM drive is plugged in, and it will put things back where they belong.
