I have been trying to purchase both a Macbook Pro and Mac Pro in Ireland. I've been told by an Apple rep that if you upgrade the RAM / Hard drives in either of these machines yourself you void the warranty AND AppleCare if you've purchased it. Apparently the only way you can get this done is to bring it to an Apple Authorised Reseller / Service Center. Is this true? If so I think I'll just jump ship again!

That's an outright lie. RAM is user-replaceable, HDDs on the Mac Pro are user-replaceable, PCIe cards on the Mac Pro are user replaceable...

You only void anything if you break stuff when you're in there.
