Sometime next year we can be fairly sure there will be a new model - if only to use the new 16Gb chip from Samsung.

So, out we go, buy the new phone, and the SIM from our 'official' provider will still work.

Can anyone make use of the 'old' phone? It would make sense for the official providers to offer SIM Only iPhone contracts.

If they don't do this, then the resale value of iPhones will take a knock... only being usable by the minority (albeit sizeable) that want to go the hack route. And, neither the provider nor Apple will get any additional revenue.
