So, after upgrading my 500 tibook to a superdrive, I figured I should upgrade the original hard drive as well. My question is basically, what brand should I look at as being most reliable and cost effective? Also, I've seen a lot of discussion about HD speed; how much speed is worth paying for? It seems that I whould go at a minimum for the 5400 rpm, but I'm not sure if going for 7200 makes sense or not.

I upgraded mine a while back to a 7200 RPM Hitachi drive. Excellent quality, very quiet, and the extra RsPM makes a big difference.
