I currently have an early 2015 MacBook Pro. 2.9 GHz Dual-Core Intel Core i5

I want to do an upgrade. How much of an improvement would the current air be? I want to at least do the quad core. I know the Pros may be updated this month possibly.

Currently use it for word processing, internet. Make MKV and handbrake as well as light photo editing with Pixelmator and previously light room.

MY biggest holdup for not getting an air when I bought the pro was the lack of Retina display. I feel like an air would be good for what I use it for but at the same time I don't want to be buying a $1,000 computer that would be only slightly better than what I have now.
 
My suggestion is to see if the Pro is updated soon (rumors are this month or next month) and re-assess. The quad-core Air would be faster for short bursts, but if you are doing heavy encoding or deciding the processor will limit the Turbo Boost as it is a 10W processor vs the 28W in your 2015 Pro. That means that it doesn’t sustain its fast speeds for very long.

For light usage you would notice an improvement because the CPU is good at short bursts, and the SSD and memory are faster.

yeah that’s probably best, in no hurry, I think it will come down to price and what they decide to bump up as far as ram or anything else. I wish they had a non touch at version.
