Ok guys im sorry If this has already been asked and I have missed it, but I was wondering if it is possible to upgrade to a firmware that apple is no longer signing.
I ask because I have an Ipod touch 4th gen that is currently on 5.0.1(JB) and would like to upgrade to 5.1.1(JB).
If it is possible what would I need to do it because I already have the 5.1.1 firmware ipsw and I have my 5.0.1 shsh blobs saved.

Also the Ipod has never been on any firmware higher that 5.0.1.

You have not missed it because you have not searched for it.
Go to iclarified.com for step-by-step tutorials.

Open cydia and look at the top of the page.
It will display what shsh blobs you have available for that device on cydias server.
You can only restore to any versions listed there and offcouse the latest firmware that Apple signs currently.

Thank you I can see that I have all shsh blobs upto 6.0.1. Now just to stitch these into the firmware, thank god for redsn0w, and I should be able to restore it right?

Yes, if you have them listed up there then you're good.
All you gotta is stitch them with the latest redsnow and you're good.
Make sure you put your device in pwned DFU using redsnow before you open up itunes and attempt to restore to that custom firmware.
Good luck.
