Urgent Applecare Inquiry

I wanted to get an Applecare kit for my girlfriend's Mac Mini but it totally slipped my mind until recently.

Apple's warranty page says

Our records indicate that your product is covered under Apple's Limited Warranty which is estimated to expire on November 06, 2008.

Would I be able to pick this up at an Apple Store tomorrow, the 5th, and have it activated before the day's over?
