I'm currently studying in the US for a term and planning to buy a new iPad Air out here to save on the "Aussie tax"; if I buy a cellular version will I just be able to put an Australian nano data SIM in in when I get home? Any carrier restrictions? Should I buy a particular carrier's model out here?
 
the iPad Air appears to have only 1 cellular version:

According to this, you would be buying the same Model A1475 everywhere in the world. And if the past is any indication, then the ipads are unlocked and you should be able to just pop in a sim. I recommend you check back when they are released to ENSURE that it is unlocked.

Keep in mind your iPad warranty will not be valid in Australia. But happy iPading!
