Yes, there are differences. You can charge every USB-C device with every USB-C cable, however the speed will vary.
It depends on some electric properties of the wire (cross-section), as well as the length.

Thumb rules:
  • The thicker, the faster
  • Not longer than 2m
 
Right now most 3rd party cables seem to be rated for only 60W or lower, while the Apple one seems to be 90W or 100W.

If you search Amazon for "usb c cable 100w", you should get a few choices, but they actually are more expensive than Apple's right now. I prefer Anker or Belkin myself, but it doesn't seem they make the 100W cables yet.
